It’s State Fair time again, and you know what that means – Foods on a Stick! If you don’t feel like fighting the traffic or the crowds this year and want to try making your own fair food on a stick, try this recipe for twister potatoes! They are crispy and delicious, and sure to satisfy that salty craving for you. Ingredients can of course be purchased at Blue Skye Mercantile!
Twister Potato on a Stick
4 medium Yukon Gold Potatoes
¼ cup butter olive oil
2 cloves of garlic, minced
½ tsp Blue Cheese Gourmet Sea Salt
¼ tsp black pepper
4 wooden skewers
Preheat oven to 375 degrees Fahrenheit. Soak the 4 wooden skewers in water for 10 minutes
Carefully push a skewer through the center of each potato. Place a paring knife, positioned at an angle at one end of the potato. Start cutting toward the opposite end, turning the potato as you cut thin slices around the skewer until the whole potato has been sliced like a corkscrew.
Gently stretch the potato apart on the skewer. Rest the skewers over a baking dish so that the ends are resting on the edge of the dish and the potatoes are sitting just above the pan.
In small bowl, combine the olive oil, garlic, sea salt and black pepper. Mix well. Brush each potato skewer thoroughly with the oil and seasoning mixture.
Bake for 45-55 minutes, or until the potatoes are cooked through and the edges are crispy.
